Ingredients

For the dough:

  • 1 cup salted butter, softened
  • 1 ¼ cups sugar
  • ¼ cup cream cheese
  • 2 tablespoons light corn syrup (optional, for softness)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • 1 egg
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • ¼ teaspoon baking soda

For the filling:

  • ½ cup softened butter
  • 1 cup brown sugar
  • 2 teaspoons cinnamon

For the glaze:

  • 2 tablespoons cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 cup powdered sugar
  • ½ teaspoon vanilla
  • 1½ tablespoons milk

How to Make Them

  1. Prepare the dough: In a large bowl, beat the butter, sugar, and cream cheese until smooth and fluffy. Add the corn syrup, vanilla, almond extract, and egg, and mix well. Stir in the flour, baking powder, salt, and baking soda until combined. Divide the dough into two parts, wrap in plastic wrap, and chill for 1 hour.
  2. Make the filling: In a small bowl, mix the softened butter, brown sugar, and cinnamon until well combined.
  3. Shape the cookies: Preheat your oven to 190°C (375°F). Roll each dough portion into a rectangle about 15×8 inches. Spread the cinnamon filling evenly over each. Roll each rectangle tightly from the long side into a log. Wrap in plastic and chill for 1 hour for easier slicing.
  4. Slice and bake: Slice each log into 1-inch thick pieces. Place on a baking sheet lined with parchment paper. Bake for 10 minutes. Let cool for a few minutes before transferring to a wire rack.
  5. Make the glaze: Beat the cream cheese, butter, powdered sugar, vanilla, and milk until smooth and creamy. Adjust with more milk if needed.
  6. Finish: Drizzle the glaze over the cooled cookies. Enjoy!

Tips & Variations

  • Add nuts or chocolate: Mix chopped nuts or chocolate chips into the cinnamon filling for extra flavor.
  • Gluten-free: Use gluten-free flour blends and follow package instructions.
  • Extra spice: Add a pinch of nutmeg or cloves for a more spiced flavor.
  • Different toppings: Try cream cheese frosting, chocolate glaze, or caramel sauce instead of the simple glaze.

How to Serve

These cookies are perfect with coffee or tea in the afternoon. They also pair well with vanilla ice cream or make a sweet breakfast treat. Great for sharing at gatherings or giving as homemade gifts!

Enjoy baking and indulging in these easy, delicious cinnamon roll cookies!
