Ingredients (for 8-10 servings):

  • For the Tomato Sauce (or use your favorite marinara sauce):
    • 1 tablespoon olive oil
    • 1 medium onion, finely chopped
    • 2 cloves garlic, minced
    • 1 can (800g) crushed tomatoes or passata
    • 1/2 teaspoon dried oregano
    • Salt and pepper to taste
    • A pinch of sugar (to balance acidity)
  • For the Ricotta Filling:
    • 500g ricotta cheese
    • 1 large egg
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup fresh parsley, chopped
    • Salt and black pepper to taste
  • For the Vegetables:
    • 1 tablespoon olive oil
    • 1 medium zucchini, thinly sliced into half-moons
    • 1 red bell pepper, cut into strips
    • 1 yellow bell pepper, cut into strips
    • 1 cup sliced mushrooms
    • 1 bag (200g) fresh spinach
    • Salt and pepper to taste
  • For Assembly:
    • 12-15 lasagna noodles (fresh or dried; if dried, cook according to package directions)
    • 2 cups shredded mozzarella cheese

Preparation:

  1. Prepare the Tomato Sauce: In a medium pot over medium heat, warm the olive oil. SautƩ the onion until translucent, add the garlic, and cook for another minute. Stir in the crushed tomatoes, oregano, salt, pepper, and a pinch of sugar. Simmer for at least 20-30 minutes, stirring occasionally, until it thickens.
  2. Prepare the Ricotta Filling: In a large bowl, combine the ricotta cheese, egg, Parmesan cheese, parsley, salt, and pepper. Mix well until homogeneous.
  3. SautƩ the Vegetables: In a large skillet over medium-high heat, warm one tablespoon of olive oil. Add the zucchini, bell peppers, and mushrooms. SautƩ for 5-7 minutes until tender-crisp. Remove from heat. In the same skillet (if needed), add the spinach and sautƩ briefly until wilted. Drain any excess liquid.
  4. Assemble the Lasagna: Preheat oven to 190°C (375°F).
    • Spread a thin layer of tomato sauce on the bottom of a large baking dish (approximately 9×13 inches).
    • Lay a layer of lasagna noodles (if using no-boil dry lasagna, ensure they are al dente).
    • Spread half of the ricotta mixture over the lasagna noodles.
    • Cover with half of the sautĆ©ed vegetables.
    • Sprinkle with one cup of mozzarella cheese.
    • Cover with more lasagna noodles.
    • Repeat the layers: tomato sauce, remaining ricotta, remaining vegetables, and the other cup of mozzarella.
    • Finish with a final layer of lasagna noodles, a good amount of tomato sauce, and a little more mozzarella and grated Parmesan on top.
  5. Bake: Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  6. Rest and Serve: Let the lasagna rest for 10-15 minutes before slicing and serving. This allows it to set and makes it easier to portion.
