Instructions

  1. Preheat the oven: to 200°C (400°F). Line a baking sheet with parchment or foil and lightly grease.
  2. Sauté vegetables: In a skillet, cook the onion and garlic until soft. Let cool.
  3. Mix the meatloaf: In a large bowl, combine the ground chicken, cooled onion and garlic, egg, bread crumbs, milk, Parmesan, parsley, Italian seasoning, and salt. Mix gently until just combined.
  4. Form the loaf: Spread half of the mixture into a rectangle on the prepared baking sheet. Arrange the mozzarella sticks in the center, then cover with the remaining mixture, shaping it into a loaf to seal the cheese inside.
  5. Add sauce: Spread marinara sauce over the top of the loaf.
  6. Bake: for 45 minutes.
  7. Prepare the topping: Mix panko, Parmesan, melted butter, and parsley.
  8. Finish and broil: Remove the meatloaf from the oven, sprinkle with shredded mozzarella and the breadcrumb topping. Return to the oven and bake for another 15-20 minutes until golden and cooked through.
